Chilli Honey, Explained

Every so often a jar leaves the kitchen and people don't quite know what to do with it. Chilli honey is that jar.

So here it is: what it is, why it works, and where it belongs.

The idea is old — southern Italy has been pairing heat and sweetness for generations — but the balance is everything. Too sweet and it's dessert pretending to be a condiment. Too hot and you lose the honey entirely. Bippi's Italian Chilli Honey infuses real honey with fresh Australian chilli until the two stop competing: it opens sweet, finishes warm, and makes you go back to check what just happened.

Sweet first, warm after

Where it belongs, in rough order of how fast it will disappear: over anything with melted cheese (a margherita pretzel, a toastie, a baked brie that never stood a chance); on ricotta pancakes on a slow Sunday; drizzled over crispy chicken; brushed onto roast pumpkin or carrots in the last ten minutes; and — Nonna's verdict, delivered after initial scepticism — a thin thread over fresh ricotta with nothing else at all.
