
Salsa Verde Barramundi

If you’re after a simple, protein-filled and easy dinner, then this Salsa Verde Barramundi is perfect.
Ingredients
- 2 fillets of barramundi, or any other firm white fish
- 1 bunch of asparagus, ends cut off
- 2 tbsp italian style salsa verde
- salt and pepper to season
- parsley for garnish
- 1 tbsp olive oil
Instructions
- season your fish with salt and pepper
- place a pan on medium-high heat and warm olive oil before placing fish in pan skin-side down along with asparagus
- drizzle over 2 tbsp salsa verde, using a spoon to coat the fish and asparagus in the salsa verde
- allow to cook until fish skin is crisp, then flip over and allow to finish cooking, ensuring asparagus cooks evenly as well
- once fish and asparagus are cooked, serve on a place with extra salsa verde and a sprinkle of parsley
