
Ricotta Lemon Bomba Pasta

This creamy, decadent pasta dish comes with a hint of spice and zest, perfect for a quick midweek meal.
Ingredients
- 400g fusilli pasta (or your preferred pasta)
- 250g fresh ricotta
- Rind of 1 lemon
- 50g parmesan cheese
- 1 tbsp olive oil
- 1 tsp salt
- 3 tbsp Bippi Italian Bomba Spicy Spread
Instructions
- Boil your pasta in salted water until cooked al dente or to your liking
- While the pasta is cooking, combine the lemon rind, parmesan, olive oil and salt in a food processor and blitz until they form a crumb
- Add the ricotta to the food processor and blitz until smooth and creamy
- Place the ricotta mixture into a pan and add the Bippi Italian Bomba Spicy spread, mixing until combined
- Drain your pasta, then add it to the sauce and mix until pasta is coated in sauce
- Serve with extra parmesan and pepper to taste
