
Italian Style Mussels

The perfect winter warmer that combines fresh mussels with our delicious Chilli Sugo.
Ingredients
- 1kg fresh mussels, scrubbed and de-bearded
- 1 jar bippi chilli sugo
- 1 garlic clove, diced
- 1 small red chilli
- 1 bay leaf, fresh
- 1/2 cup dry white wine
- 1/2 cup brown onion, diced
- 1 cup parsley, chopped
- 2 tbsp olive oil
Instructions
- place onions and olive oil in a large cold pot over medium heat until translucent.
- add chilli, garlic, and bay leaf and fry for 30 seconds.
- add mussels and increase heat to high. mix to combine, then add white wine and give the pot a good shake. leave for about 30 seconds. add the chilli sugo and stir. place the lid on the pot and leave to cook for 3-5 minutes, shaking the pot occasionally.
- remove any mussels that open and place in a separate dish. continue to do so as the mussels open, and discard any that remain closed.
- lower the heat to medium and continue to simmer the sauce to thicken (5-10 mins).
- once the sauce is at your desired thickness, add the mussels back in the pot and turn off the heat. add parsley. enjoy!
