
Italian Style Butter Chicken

An Italian twist on an Indian classic, this dish brings new levels of flavour to a beloved curry.
Ingredients
for the chicken
- 6 chicken thighs
- 1 tbsp garlic paste
- 1 tbsp bippi italian style chilli (any heat level)
- 1/2 tbsp chilli powder
- pinch of salt
- olive oil to pan fry
for the sauce
- 1 onion
- 700ml passata
- 1/3 cup cashews
- 1 tbsp garlic paste
- 1 tsp garam masala
- 100g butter
- 3 tbsp cream
- 50g parmesan cheese or pecorino romano
- salt and pepper to taste
Instructions
- dice chicken thighs into bite size pieces and marinate with garlic paste, bippi italian style chilli, chilli powder and a pinch of salt for at least 30 minutes
- add olive oil to pan and fry off chicken until golden brown
- remove chicken from pan, and add onion and garlic paste along with half the butter and fry until fragrant and translucent
- add garam masala and cook briefly, then add passata and allow to simmer for a few minutes
- add cashew nuts and simmer for a few more minutes
- blend sauce in food processor or with a stick blender until smooth and creamy, then return sauce to the pan (if you desire a super smooth consistency, put the sauce through a sieve)
- add the remaining butter, cream, salt and pepper to taste, and parmesan and stir until combined
- add chicken back into the sauce and serve curry with roti or rice and enjoy!
