
Chilli Prawn Pasta

This pasta is deliciously comforting with a small kick of spice for a perfect midweek meal.
Ingredients
- 200g gnocchi sardi (or any small pasta)
- 2tbs bippi mild chilli oil
- 220g prawns, peeled, cleaned and chopped
- 200g cherry tomatoes, chopped
- 1tbs olive oil
- 1 shallot (or 1/2 small onion), diced
- 2 garlic cloves, diced
- 1/2tsp anchovy paste
- 1/2 glass of wine
- 1tbs butter
- 1/2 juice of lemon
- 1/4 cup parsley, chopped
- salt to taste
Instructions
- Cook the pasta per packet instructions.
- Fry the shallots, garlic, anchovy paste and chilli oil until fragrant.
- Add the cherry tomatoes and cook until broken down. Add the prawns and mix the wine until evaporates.
- Transfer the pasta and 1/2 cup pasta water and butter.
- Mix until a sauce emulsifies, and add the lemon juice and parsely to finish.
