
Cheesy Chilli Potatoes

The perfect side dish combining potatoes, cheese, and chilli.
Ingredients
- 2 potatoes
- Olive oil
- Bippi extra hot chilli oil
- Anchovy paste or diced anchovy fillets
- Capers
- Diced garlic
- Salt
- Parsley (chopped)
- Grated parmigiano reggiano
Instructions
- Slice potatoes 2cm thick and parboil in salt water, drain, and let dry.
- Fry potatoes in pan with olive oil on medium heat until golden brown (low and slow).
- In the last minute, add to taste: Bippi extra hot chilli oil, anchovy paste or diced anchovy fillets, capers, diced garlic, and salt.
- Mix until well combined then plate and top with more chilli oil, freshly chopped parsley, and grated parmigiano reggiano.
