
Bippi Prawns & White Bean Canapé

The starter with flair! A spicy garlic prawn blend to kick of your meal with a bang…
Ingredients
White beans
- 1 can of white beans, drained and rinsed
- 1 clove of garlic
- 2 tbsp extra virgin olive oil
- 10 basil leaves
- 1/4 tsp salt
- zest and juice of a small lemon
- 1 tsp salt
Prawns
- 12 large raw prawns, cleaned.
- 1 tbsp bippi (mild)
- 1 clove garlic, finely minced
- 2 tsp olive oil
- 1/4 tsp salt
- 2 tbsp chopped parsley (extra for garnish)
Instructions
- Marinate prawns in the Bippi, garlic, oil and parsley. Set aside for grilling or pan frying later.
- In a food processor add beans, garlic, olive oil, basil leaves, salt and the lemon. Blend until smooth.
- Grill prawns for 3-4 mins on each side.
- To serve: spread a tablespoon of the bean mixture over each pita crisp and then top with prawns.
- Sprinkle with fresh chopped parsley and a drizzle of olive oil.
- Notes: Bean puree will keep well in the fridge for 3-4 days.
