Bippi Prawns & White Bean Canapé

Ingredients

White beans

  • 1 can of white beans, drained and rinsed
  • 1 clove of garlic
  • 2 tbsp extra virgin olive oil
  • 10 basil leaves
  • 1/4 tsp salt
  • zest and juice of a small lemon
  • 1 tsp salt

Prawns

  • 12 large raw prawns, cleaned.
  • 1 tbsp bippi (mild)
  • 1 clove garlic, finely minced
  • 2 tsp olive oil
  • 1/4 tsp salt
  • 2 tbsp chopped parsley (extra for garnish)

Instructions

  1. Marinate prawns in the Bippi, garlic, oil and parsley. Set aside for grilling or pan frying later.
  2. In a food processor add beans, garlic, olive oil, basil leaves, salt and the lemon. Blend until smooth.
  3. Grill prawns for 3-4 mins on each side.
  4. To serve: spread a tablespoon of the bean mixture over each pita crisp and then top with prawns.
  5. Sprinkle with fresh chopped parsley and a drizzle of olive oil.
  6. Notes: Bean puree will keep well in the fridge for 3-4 days.
