RICOTTA LEMON BOMBA PASTA

ingredients

  • 400g fusilli pasta (or your preferred pasta)

  • 250g fresh ricotta

  • Rind of 1 lemon

  • 50g parmesan cheese

  • 1 tbsp olive oil

  • 1 tsp salt

  • 3 tbsp Bippi Italian Bomba Spicy Spread

METHOD

  1. Boil your pasta in salted water until cooked al dente or to your liking

  2. While the pasta is cooking, combine the lemon rind, parmesan, olive oil and salt in a food processor and blitz until they form a crumb

  3. Add the ricotta to the food processor and blitz until smooth and creamy

  4. Place the ricotta mixture into a pan and add the Bippi Italian Bomba Spicy spread, mixing until combined

  5. Drain your pasta, then add it to the sauce and mix until pasta is coated in sauce

  6. Serve with extra parmesan and pepper to taste
