Chilli Con Carne

ingredients

  • 500g beef mince

  • 1/2 white onion, finely chopped

  • 1/2 red onion, finely chopped

  • 2 cloves garlic, finely chopped

  • 1 red capsicum, chopped

  • 1 green capsicum, chopped

  • 1 tbsp olive oil

  • 2 tbsp tomato paste

  • 1 can corn

  • 1 can black beans

  • 1 can tinned tomatoes or 250ml passata

  • 200ml beef stock

  • bippi chilli ketchup

  • 3 tsp cumin

  • 3 tsp smoked paprika

  • 3 tsp oregano

  • 2 tsp salt

  • 2 tsp pepper

to serve:

  • rice

  • lime

  • avocado

  • parsley, chopped

  • shredded cheese

METHOD

  1. in a pot, add the olive oil, garlic, white onion, red onion, red capsicum and green capsicum. cook until tender

  2. add beef mince and cook until browned

  3. add tomato paste and mix well to combine

  4. add cumin, paprika, oregano, salt and pepper and mix

  5. add half a bottle of bippi chilli ketchup, tomatoes or passata, and beef stock, mix well and allow to simmer with cover on for 20-30 minutes or until thickened

  6. serve with rice, shredded cheese, slices of avocado, a sprinkle of parsley and a squeeze of lime and enjoy.
