Nonna’s Chicken Schnitzel Panino

ingredients
Chicken Schnitzel
2 chicken thighs, boneless and skinless
250g breadcrumbs
100g parmesan
2 eggs beaten together
2 tsp salt
2 tsp pepper
Handful of parsley, chopped
Olive oil for cooking
Panino Toppings
Ciabatta or your preferred sandwich bread
2 tbsp Bippi Italian Style Salsa Verde
2 tbsp Bippi Italian Bomba Spicy Spread
125g fresh buffalo mozzarella, thickly sliced
Handful of rocket
METHOD
In a tray, combine breadcrumbs, parmesan, salt, pepper, and parsley. Mix together and ensure the crumb is evenly spread in the tray.
Coat chicken thighs in egg, then coat in the breadcrumb mixture ensuring they are well covered.
Heat olive oil in a pan, then shallow fry chicken thighs until crispy and golden.
Once the chicken is cooked, it’s time to assemble the panino. Cut your ciabatta down the middle, and on the bottom slice spread on the Italian Style Salsa Verde. Place your chicken thighs on top, then layer on the slices of mozzarella. Add the rocket, and finally spread the Italian Bomba Spicy Spread on the other half of the ciabatta. Add this slice on top and enjoy your panino!
