Spicy Broccolini & Egg Tacos

Ingredients

4 corn or flour tortilla

1 bunch of broccolini blanched and cooled

1 tbsP BipPi (HOT)

4 eggs

1 clove of garlic

1 TBSP olive oil

4 tbsP of grated provolone dolce or your favourite melting cheese

salt and pepper to taste

Method

  1. In a hot pan sauté the blanched broccolini with garlic and bippi in a little olive oil for 3 mins. Then make Nonna proud and season with a sprinkle of salt and pepper to taste.

  2. Scramble or fry the eggs to your preference, you could add a little more BIPPI to your eggs if you're feeling spicy.

  3. Warm the tortilla to the pack’s directions and top the prepared tortillas with your eggs, broccolini and cheese to serve.

NOTES: If you are after some protein you might like to include one or 2 Italian sausages. Remove a good quality pork sausage from the casing and pan fry for a few minutes then sauté together with the broccolini.
