Spicy Salmon Buddha Bowl

ingredients

  • 2 handfuls alfalfa sprouts

  • 2 tbsp goats cheese

  • 1-2 tbsp sauerkraut

  • 1/4 capsicum chopped

  • 1/2 cucumber sliced

  • 1/4 avocado

  • 1 piece salmon

  • Olive oil

  • Sesame seeds

  • Salt, pepper, chilli

  • 1 can chickpeas ( only use 1/2 in the bowl, but can use the rest for other meals or snacks ! )

  • Garlic cloves ( optional )

  • 1/2 sweet potato chopped

  • 1 cup brussels sprouts cut in half

  • 2 tsp bippi Italian Style hot chilli

METHOD

  1. preheat the oven to 180 degrees celsius

  2. Cut up your sweet potato and Brussel sprouts and place onto a lined baking tray

  3. Rinse and drain your chickpeas and add to tray with your garlic cloves

  4. Drizzle well with olive oil, salt, pepper and chilli flakes ( plus any other spices you like) , coat well and bake for 30-40 mins or until crispy ( may need to take brussels out a bit earlier )

  5. Next, pour some sesame seeds on a plate and coat your piece of salmon in the seeds

  6. Heat a pan with olive oil on medium heat and fry salmon until golden , set aside

  7. Chop all your remaining vegetables

  8. Place both your raw and cooked veggies into a bowl

  9. Add your salmon, sauerkraut, feta and avocado

  10. Drizzle with some olive oil, salt, pepper and chilli

  11. Add 2 tsp of your bippi hot chilli on top and enjoy!
