Salsa Verde Fish

ingredients

  • 2 fillets of firm white fish (we used barramundi)

  • 1 bunch of asparagus, ends cut off

  • 2 tbsp italian style salsa verde

  • salt and pepper to season

  • parsley for garnish

  • 1 tbsp olive oil

METHOD

  1. season your fish with salt and pepper

  2. place a pan on medium-high heat and warm olive oil before placing fish in pan skin-side down along with asparagus

  3. drizzle over 2 tbsp salsa verde, using a spoon to coat the fish and asparagus in the salsa verde

  4. allow to cook until fish skin is crisp, then flip over and allow to finish cooking, ensuring asparagus cooks evenly as well

  5. once fish and asparagus are cooked, serve on a place with extra salsa verde and a sprinkle of parsley
