italian style butter chicken

ingredients

for the chicken

  • 6 chicken thighs

  • 1 tbsp garlic paste

  • 1 tbsp bippi italian style chilli (any heat level)

  • 1/2 tbsp chilli powder

  • pinch of salt

  • olive oil to pan fry

    for the sauce

  • 1 onion

  • 700ml passata

  • 1/3 cup cashews

  • 1 tbsp garlic paste

  • 1 tsp garam masala

  • 100g butter

  • 3 tbsp cream

  • 50g parmesan cheese or pecorino romano

  • salt and pepper to taste

METHOD

  1. dice chicken thighs into bite size pieces and marinate with garlic paste, bippi italian style chilli, chilli powder and a pinch of salt for at least 30 minutes

  2. add olive oil to pan and fry off chicken until golden brown

  3. remove chicken from pan, and add onion and garlic paste along with half the butter and fry until fragrant and translucent

  4. add garam masala and cook briefly, then add passata and allow to simmer for a few minutes

  5. add cashew nuts and simmer for a few more minutes

  6. blend sauce in food processor or with a stick blender until smooth and creamy, then return sauce to the pan (if you desire a super smooth consistency, put the sauce through a sieve)

  7. add the remaining butter, cream, salt and pepper to taste, and parmesan and stir until combined

  8. add chicken back into the sauce and serve curry with roti or rice and enjoy!
