CHILLI PRAWN PASTA

ingredients

  • 200g gnocchi sardi (or any small pasta)

  • 2tbs bippi mild chilli oil

  • 220g prawns, peeled, cleaned and chopped

  • 200g cherry tomatoes, chopped

  • 1tbs olive oil

  • 1 shallot (or 1/2 small onion), diced

  • 2 garlic cloves, diced

  • 1/2tsp anchovy paste

  • 1/2 glass of wine

  • 1tbs butter

  • 1/2 juice of lemon

  • 1/4 cup parsley, chopped

  • salt to taste

METHOD

  1. Cook the pasta per packet instructions.

  2. Fry the shallots, garlic, anchovy paste and chilli oil until fragrant.

  3. Add the cherry tomatoes and cook until broken down. Add the prawns and mix the wine until evaporates.

  4. Transfer the pasta and 1/2 cup pasta water and butter.

  5. Mix until a sauce emulsifies, and add the lemon juice and parsely to finish.
