Chilli Honey Chicken Burger

ingredients

  • 4 chicken thighs

  • 4 burger buns

  • 1 cup plain flour

  • 1/2 tbsp garlic powder

  • 1/2 tbsp onion powder

  • 1/2 tbsp paprika

  • salt and pepper

  • 1 tbsp seeded mustard

  • 2 cups buttermilk

  • bippi italian chilli honey

  • 1 bag coleslaw salad mix

  • 1/4 cup kewpie mayo

  • 1 tbsp red wine vinegar

  • 1 tbsp lime juice

  • burger pickles

  • 5 cups vegetable oil

METHOD

  1. in a large bowl, Mix together buttermilk and seeded mustard with a pinch of salt and pepper, then submerge the chicken thighs in the buttermilk mixture. cover with plastic wrap and place in the fridge for at least 30 minutes.

  2. make the slaw while you wait - combine mayo, red wine vinegar, and lime juice in a small bowl and mix well. season with salt and pepper to taste, then dress coleslaw salad mix.

  3. before you bring your chicken out of the fridge, in another bowl combine flour, garlic powder, onion powder, paprika, and a pinch of salt and pepper then place flour mixture into large zip-lock bag.

  4. remove chicken from buttermilk mixture and place in bag with flour.

  5. seal bag tightly and shake to coat chicken in the flour mixture.

  6. in a pot, heat vegetable oil - you can test if it’s hot enough by dripping a small amount of the chicken batter into the oil. if it bubbles, then the oil is hot enough.

  7. deep fry chicken in oil until golden and crispy (around 12-15 minutes).

  8. place chicken in a tray and coat with as much bippi italian chilli honey as your heart desires (we recommend using enough to make the chicken pieces glossy and shiny).

  9. toast buns in oven at 180 degrees celsius for 2-3 minutes.

  10. assemble burger with bun, coleslaw, chicken, burger pickles, and an extra drizzle of chilli honey and enjoy!
